Cakes and Pies



AngelFood Cake
   

Preheat oven to 300f. Spray a bundt pan with cooking spray very well. Sift protein powder, baking powder and salt and set aside. In a large bowl, beat egg whites with cream of tartar until stiff. In another bowl, beat egg yolks, artificial sweetener, extracts and lemon peel. Beat in water and cream, then beat in dry ingredients. Fold into whites very carefully, then spoon into prepared bundt pan. Bake for 45 minutes, then let cool 10 minutes before inverting and removing(this is the tricky part -just do your best For the frosting: Beat the cream, butter, cream cheese and ectracts well. If this is too thick, add more cream, 1 T at a time. Drizzle over cooled cake. I found this to make 12-15 servings in a standard bundt pan

Amazing Tirimisu
   

Brew the espresso or very strong coffee. Pour in a cup. Put in the freezer to cool. Mix together the eggs, sugar, mascarpone cheese and vanilla, until very smooth. Side aside. Line the bottom of a 12"springform pan with one layer of vanilla wafers (about 24). When the coffe is cool, spoon the coffee onto the wafers, just enough to flavor them but not make them distingerate (a very fine line).Spoon the cheese mixture onto the wafers, smooth with the back of a metal spoon. Refrigerate for 4 hours. When ready to serve, top the tiramisu with a thin layer of cocoa powder. Garnish with whipped cream and serve. Serves 12. Also try mixing in a bit of the espresso into the cheese mixture NOTES : My friends had no idea it was sugar-free, this is a MUST try!!!

Keto Chocolate Cake w/vanilla icing
   

Cake Directions: Preheat oven to 350. Grease cake pan. Mix dry ingredients. Then mix liquid ingredients.Combine and mix thouroughly but quickly then pour into greased 8 x 8 cake pan. Cook for 50-60 minutes until well done. Allow * hour time to cool, then spread on icing. (below)Cut into 20 pieces. Icing Directions: Mix all ingredients in mixing bowl and mash together mixing well. May heat in microwave for 30 sec for more effective mixing Spread on cake.

LC Cool 'n Easy Pie
   

PREPARE PIE SHELL: Melt butter in small bowl. Add ground nuts and sweetener. Mix well. Press firmly into bottom and up sides of 8" pie plate. Refrigerate until firm. PREPARE FILLING: Whip cream and sweetener on high speed of mixer Until whipped. (You want 8 oz. of whipped cream.) Set aside. Stir boiling water into jello in large bowl. Stir at least 2 minutes until jello is completely dissolved. Mix cold water and ice to measure 1 cup. Add to jello, stirring until slightly thickened. Remove any remaining ice. Stir in whipped cream with wire whisk until smooth. Refrigerate 15-20 minutes or until mixture is very thick and will mound. Spoon into nut crust. Refrigerate 4 hours or overnight. Garnish with additional whipped cream and chopped nuts if desired. Store leftover pie in refrigerator. Serves 8.

Dates & Walnut Cake
   

Sieve the Flour,baking soda,soda bi-carb 3-4 times and keep it aside. Chop the dates and walnuts finely. Beat the egg and keep it aside. Put the chopped dates, salted butte r,sugar powder and hot boiling water in a mixing bowl and Mix thoroughly but not too much. Add the beaten eggs alternatively with the flour in the mixing bowl till both are used. Keep mixing the mixture. Lastly add the chopped walnuts and the essence. Bake th e cake in a oven at 150 degrees for 45 mts.

Carrot Cake
   

Grind carrot and oil in a mixer, this add color to the cake Separate eggwhite and yolk. Mix eggyolk flour baking soda and baking powder cinnamon powder,vannila essence.and jaggery. Make the egg white into fluffy,fold in the yolk and flour mixture to white. If your adding fruits, dust the fruits with little flour and mix in the end. Bake the cake in the microwave preheated, at 180 degree for 20 to 30 minutes (in the convection mode) Stays fresh in the room temp for 2 days,stays fresh for 2weeks in refrigerated. Cake tastes very good when we keep it for few days,

Date Cake
   

Preheat oven to 350 deg Add dates, baking soda and baking powder to the boiling water, let it cool, Sift flour Beat egg Cream butter and sugar Add egg to the butter and sugar mixture Add flour and date mixture to the butter, sugar and egg Add milk and 1/2 the walnuts Bake in a 20 cm round tin for 60 mins at the 350 deg F Remove once done, let it cool on a cooling cake rack. You can add the rest of the walnuts on top of the cake for presentation.

Banana Cake
   

First sieve the maida,baking powder and baking soda. Add salt to this and keep it aside. Now put all the other ingredients in the mixie one by one, starting with the butter,sugar. When the butter and sugar get creamy, add the eggs, buttermilk, vanilla essence and the bananas(chopped). Run the mixie until you get a smooth mixture with no lumps. Now add it to the sieved maida in a vessel. Fold the mixture and the maida well. Now pour the batter into a greased and powdered cake tin (8"x8") and sprinkle the chopped nuts on top. Bake for 35 minutes at 200 oC. ( the time may differ in different ovens.) Cool and cut.

Rich Fruit Cake
   

Blanch almonds and chop. Mix most part of fruit with almonds. Beat eggs with vanilla essence and set aside. Cream butter and sugar and add the beaten eggs gradually. Fold in half the flour and fruit mixture into creamed mixture, mix throughly. Fold in the remaining flour and fruits. Add milk to get a dropping consistency. Grease and flour a 8 inch baking tray and pour in the cake mixture. You can jab the remaining fruit and chopped almonds on top. Bake at 350 degree F for about 40 mins. After that, put off the oven and leave it inside for approx 10 mins. Remove from oven and place it on a wire rack to cool.

Carrot Cake
   

Sieve the maida, salt, baking powder & soda. Beat the eggs in a bowl & add the grated carrot to it. To this mixture add the finely grounded sugar and then oil. Keep on stirring the mixture. Add the essence, cardamoms and the nutmeg powder to it. Put this batter in a preheated greased baking pan (180 degrees). Heat it for 35 min at 180 degrees in an oven
