Cakes and Pies



Rawa Cake
   

First beat the egg properly. Then mix the coconut and rawa properly. Add the sugar to the ghee and mix it well till it gets dissolved. Now add curd to the coconut and rawa mixture. Mix it well. Then add all the ingredients to the beaten egg and mix well. Keep it for 10 min before pouring it in the baking pan. Pre heat the oven for 15 min at 150oC. Then grease the baking pan well by applying ghee or butter. Then pour the mixture. Bake the cake at 200oC till it becomes golden in colour.

Cake Toast
   

Preheat oven at 350 degrees. Mix flour and baking powder. Beat eggs well with sugar add butter and beat well till fluffy. Add vanilla essence. Now add flour mix. Mix well with hands. Cover the dough with plastic wrap and refrigerate for 2 hrs. Make two loaves about 7 x 3 inches. Put it in two baking dish of same size of loaves or longer. Bake at 350 degrees for 25-30 minutes or till knife inserted comes out clean. Cool it and with serrated knife cut into 1/2 inch thick slices. Reduce temperature to 300 degrees.In two baking trays put slices and bake for 30-40 minutes or till it becomes brown and crisp.

Fruit Cake
   

Beat eggs, butter & vanilla essence until fluffy and add maida Next add sugar, salt, baking powder, lemon rind and lemon juice and mix well. Finally add the dried nuts & milk. In a greased tray pour the mixture and bake 350oC till done. Pour the caramel on top and serve chill.

Quickie-Cake
   

Beat the eggs, cream and sugar in a mixer-grinder. Pour it in a vessel, add maida slowly, while stirring continuously to avoid lumps. Add baking powder and the dry fruits. Keep aside for 1 hour. Pour the cake mix into a greased baking dish and bake for 40 minutes.

Kesari Gulab Mawa Cake
   

Eggs- beat preferably with a electric egg beater till frothy add sugar, ricotta, flour, milk powder, milk, rose essence, melted ghee, baking powder, saffron threads and beat again till frothy and light and all the ingredients have mixed well. Preheat gas fanforced oven on 180oC or 360oF or electric oven on 160oC or 320 oF. If cup cakes just pour 1/2 a cup and bake for 15-25 min. If using a tin, butter very lightly and dust with flour remove excess flour by tapping tin lightly. Fill the tin to 3/4 and spread out mixture flat and not in a mound. Bake 30-40 min or till very light brown. Test with a knife to check if done after you start smelling the baked cake.

Egg Curry with egg cut into cubes
   

Beat the eggs with 3/4th spoon of salt in a dish. Cover it with a lid and put the dish in a cooker and cook for 15 minutes without putting the weight on the cooker. Check if the egg is boiled well with a knife by poking it in to the egg the way you do to check if the cake is baked. When the egg is done, take the egg from the dish and cut it into cubes of 1 cm length. Slice the onions and tomatoes. Put a vessel and pour the oil into it. When the oil is hot, put ginger garlic paste and onions into it and let it fry till the onions are done. Add the coconut and let it fry. Add tomatoes and egg cubes and fry for about 3 min. Add salt (that is reqd for onions alone), chilli powder and garam masala. Pour 1/2 glass of water and cover the vessel with a lid. Let it cook for 5 to 7 min. Serve hot with Rice.

Banana-Nut Muffins
   

Preheat oven to 400oF. Grease a 12 cup muffin pan. Sift flour, sugar, baking powder and salt into a medium bowl; make a well in center. Mix milk, egg, oil, banana and walnuts in a small bowl. Pour mixture into well (in the flour). Mix batter just until moistened; do not overmix. Spoon batter into prepared muffin cups. Bake until a toothpick inserted in center comes out clean or until muffins are golden brown, about 15 minutes

Apple Cake
   

Preheat the oven to 350 degrees. Lightly grease and flour 9 x 13 pan. Beat the vegetable oil and eggs till foamy. Add sugar, flour, ground cinnamon, baking soda, salt and vanilla essence in that order and mix well. Lastly stir in the diced apples and mix well. Pour batter into greased pan. Bake at 350 degrees for 30-40 minutes. Cool in pan for 10 mins. This cake needs no frosting.

Vanilla Short Cake
   

Sift flour, baking powder and baking soda together. Beat butter and sugar till light. Add eggs one at a time. Add yogurt and mix well. Finally add the vanilla essence. Mix well and pour in a greased cake tin. Bake for 30-45 minutes at 350oF.

Apple Spice Cake
   

Mix flour ,sugar, oil, baking powder with a pinch of salt in food processor. Mix well. Add egg one at a time in food processor while running it. Mix well. Take out the dough and add all the ingredients except apples. You may peel the apples or they can be just cut into small pieces. Mix the apples with the hand as the dough will be hard.Press by hand. Grease the pan and bake at 180 degrees for one hour or till the cake needle comes out clean.
