Noodles Recipes



Crispy Noodles
   

Put oil into a hot wok. Heat oil until hot, place a wooden chop stick, if bubbles vigorously, oil is ready. Cut egg roll wrappers into 1 inch to 1 1/2 inch strips. Place strips into hot oil, 2 or 3 at a time. When starting to brown, turn over, remove quickly when golden brown. Avoid burning. Place on paper towel. Serve with Duck sauce and mustard.

Spicy Cold Noodles
   

Cook noodles in boiling water for 3 minutes and drain. Rinse under cold water until cool. Shake off excess water and set aside. Cut noodles with scissors. Heat 4 tbsp. oil in wok or frying pan. When oil is hot, put in rest of ingredients and stir 1 minute. Remove from heat and immediately add to noodles. Allow to cool.

Cold Chinese Noodles
   

Cook spaghetti according to package directions. Cool. Add 1/4 c. chicken broth, 2 tsp. chives, 2 tsp. soy sauce, 1 tsp. honey, dash of ginger and 2 tsp. rice vinegar (optional) in a small pot, cook over low heat until blended well. Pour over noodles and refrigerate. Serve cold. Before serving sprinkle with sesame seeds and chopped scallions.

Cold Chinese Noodles 2
   

Poach chicken, cool and cut into thin julienne strips. Cut sliced ham into thin julienne strips. Combine the chicken, ham, scallions and pecans in a large mixing bowl. Add the pasta. Heat the vegetable and sesame oils and sesame seeds in a small saucepan over medium heat just until the sesame seeds turn light brown. Remove from the heat. Stir in the coriander and soy sauce. Stand back as you do this for the mixture will crackle and sizzle. Stir in the chili oil. Pour the hot dressing over the noodles and toss to coat evenly. (It's easiest if you use your hands.) Transfer the noodles to a serving bowl and refrigerate until cold, about 3 hours.

Cold Chinese Noodles 2
   

Poach chicken, cool and cut into thin julienne strips. Cut sliced ham into thin julienne strips. Combine the chicken, ham, scallions and pecans in a large mixing bowl. Add the pasta. Heat the vegetable and sesame oils and sesame seeds in a small saucepan over medium heat just until the sesame seeds turn light brown. Remove from the heat. Stir in the coriander and soy sauce. Stand back as you do this for the mixture will crackle and sizzle. Stir in the chili oil. Pour the hot dressing over the noodles and toss to coat evenly. (It's easiest if you use your hands.) Transfer the noodles to a serving bowl and refrigerate until cold, about 3 hours.

Chicken Noodles Soup
   

In a large soup pot place chicken broth. Bring to a boil over medium-high heat. Add chicken, carrots, soy sauce, sugar, sherry and ginger; reduce heat. Cover. Simmer for 20 minutes. Bring to a boil. Add vermicelli. Cook over medium-high heat for 15 minutes. Skim off fat.

Chicken Noodles Soup 2
   

Place the chicken breast in the stock and cook for 15 minutes. Remove the meat and slice into slivers. Soak 2 oz. cellophane noodles in cold water for 30 minutes. Drain and cut into 2 inch pieces. Set aside. Heat 1 tbsp. oil in a wok, add the slivered onions and sliced mushrooms and cook a few minutes. Add chicken to the wok and cook 1 minute. Add chicken, onion and mushroom mixture to the broth, add the noodles and season with salt and pepper to taste. Garnish with scallions.

Chicken Noodles Soup 3
   

Cook noodles in 6 c. boiling, salted water for 3 or 4 minutes. Drain well and keep hot. Heat the stock with the diced chicken, water chestnuts, bamboo shoots, and the juice from their cans. Bring to boil and let simmer for a few minutes. To serve, put the noodles into individual warm soup bowls and ladle the soup over them.

Shrimp Noodles
   

Mix the cornstarch with the egg white in a bowl. Add the shrimp and toss to coat well. Cook the noodles in boiling salted water for about 5 minutes. Drain and rinse under cold running water. Melt the lard in a pan. Add the scallions and shrimp and stir-fry for 1 minute. Add the soy sauce, sherry and sugar and stir well. Add the noodles and mix well. Continue cooking for 2 to 3 minutes, then add the sesame seed oil just before serving.

Chicken with Sesame Noodles
   

First make the sesame noodles: Cook the spaghetti according to package directions. Rinse and drain. In a jar, add the soy sauce, sesame oil and the sugar. Shake until well blended and the sugar has dissolved. Pour this over the pasta. Toss with scallions and sprinkle with the sesame seeds. Set aside while you marinate and then cook the chicken. Chicken: In a bowl mix the soy sauce, teriyaki sauce, garlic, brown sugar and the ginger. Make sure the sugar has pretty much dissolved. Add the chicken, making sure it's all coated with the sauce. Cover and stick in the fridge for 2-3 hours. Remove the chicken from the marinade, and toss out the marinade left at the bottom of the bowl. Heat the sesame oil in a large non-stick pan. Add the chicken in batches and sauté for about 10 minutes, or until done, adding more sesame oil as needed. Remove the chicken from the pan and let cool slightly. Slice the chicken diagonally into thin strips. Serve the chicken over the sesame noodles.
